Fresh salsa is an easy, low calorie dish that is pleasing to the eye and palate. Use it to top fish, accompany Mexican food, or simply eat it with corn chips. (The quacamole in the photo is simply mashed avocado, lime juice, salt and pepper).
Salsa Ingredients:
3 medium-sized tomatoes, diced
1 pepper (any color), diced
½ red onion, finely diced
½ cup fresh cilantro, finely chopped
the juice from one lime
salt and pepper to taste
Mix the tomatoes, pepper, onion and cilantro in a large bowl. Add the lime juice and salt and pepper to the vegetables and toss. Makes about 3 cups of salsa.

I absolutely love salsa – I had no idea it was so easy to make, I’ll def give it a try 🙂
Try it! You might never go back to the stuff in the jar.
so much better (and prettier) than the supermarket salsa jars! I’ve only added mango so far, but maybe I can try some peaches or pineapple next time…getting hungry only thinking about it 😉
Let me know how the pineapple salsa turns out!

Handy quick one here, We can just pretend the sun is shining out there. Remember Lily’s My Mexican Shop will have nonGM GF tortilla chips on sale from Monday (1st May 2012) so will go great with this, well that’s what I’ll be using with it! Marian
This looks deliciously fresh and zingy. My husband (Tony) does a very similar one to top over lettuce leaves but sprinkles lemon juice instead of lime juice. Must suggest the lime juice to him instead. Thanks 🙂 Marian
Lemon juice is good too. Thanks for reblogging!
Hi Deanna, the reblogging function is brilliant, done in a few seconds!
